Garden Fresh Vegetable Soup

Making a garden-fresh vegetable soup is a wonderful way to enjoy the flavors of your homegrown vegetables.

What you need

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced (any color)
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 2 cups diced tomatoes (fresh or canned)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme (or use fresh if available)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup cooked beans (such as kidney beans, cannellini beans, or chickpeas)
  • Fresh parsley or basil, chopped (for garnish)

How to make it

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for another 1-2 minutes until fragrant.
  2. Add the diced carrots, celery, bell pepper, zucchini, and green beans to the pot. Sauté for 5-7 minutes until the vegetables start to soften.
  3. Stir in the diced tomatoes (with their juices) and pour in the vegetable or chicken broth. Add dried thyme, dried oregano, salt, and pepper. Bring the soup to a boil.
  4. Reduce the heat to low and let the soup simmer uncovered for about 20-25 minutes, or until the vegetables are tender and flavors are well combined.
  5. Stir in the corn kernels and cooked beans. Simmer for an additional 5 minutes to heat through.
  6. Taste and adjust seasoning with more salt and pepper if needed.
  7. Ladle the soup into bowls and garnish with chopped fresh parsley or basil.
